Our Processing Facility

We made our first Idaho White Sturgeon Caviar in 2005, selling both our caviar and sturgeon exclusively through distributors under our farm name, Blind Canyon Aquaranch. In 2016, we moved into our new processing facility, Idaho Springs Foods, and rebranded our products as Idaho Springs White Sturgeon and Idaho Springs White Sturgeon Caviar.

Idaho Springs Foods is situated in the Magic Valley in the midst of Idaho’s white sturgeon and rainbow trout-growing region. All of our Idaho White Sturgeon are sourced from our family-owned and operated aquaculture farms located in Southern Idaho.

This new, state-of-the-art processing facility has allowed us to better control our product quality from Farm to Table. That same quality is reflected in our name, Idaho Springs Foods. The pristine, natural Idaho spring water we utilize in our growing operations gives our Caviar and Sturgeon a clean, fresh flavor.

Humble Beginnings - Our Family Farm

Our family has been farming since settling along the Snake River in 1887, in what was then known as Idaho Territory. True pioneers to the region, our family raised livestock as well as forage and various food crops. Often, finding the best markets for our many foods meant making the 3-day trek on horseback to deliver produce to miners in Idaho’s Sawtooth Mountains. In those early years, it was not uncommon to stock a small, spring water-fed pond with fish caught from the Snake River.

Today, our family business remains centered on agriculture and the spring water resources of Southern Idaho, adding aquaculture to our portfolio in the 1960's. Incorporated in 1970 as Blind Canyon Aquaranch Inc., we currently operate 11 fish farms along the Snake River raising Idaho white sturgeon and rainbow trout. 

Additionally, we farm 600 acres of forage crops and operate a custom dairy heifer and beef cattle feeding operation. Blind Canyon Aquaranch also operates a 1.5 MW hydropower generating plant, making our operation a net producer, not consumer, of energy!

Our Sturgeon

We began raising rainbow trout in 1971, adding Sacramento River white sturgeon in 1984. Our company joined the Idaho White Sturgeon Cooperative in 1986 (a collaboration among members of the Idaho Aquaculture Association, Idaho Fish & Game (IDFG) and College of Southern Idaho). Shortly thereafter, we started raising white sturgeon exclusively sourced from Idaho's Mid-Snake River. 

The purpose of the Cooperative is twofold: to assist IDFG with stock enhancement and conservation efforts in the mid-Snake River region in Southern Idaho, a commitment we continue today, and to develop a commercial breeding stock of Idaho White Sturgeon for private food production (a goal realized in 2001).

The White Sturgeon (Acipenser transmontanus) is the largest freshwater fish in North America and is indigenous to rivers in the Pacific Northwest. This magnificent fish has survived since the dinosaurs, but its existence around the globe is threatened by overfishing and poaching. 

Thanks to the collaborative efforts of the Idaho Sturgeon Cooperative and Idaho Power Co., Idaho white sturgeon in the Snake River are thriving. We are proud to be a part of the continuing conservation efforts and to provide our customers with sustainable fishery products. Our Commitment to Sustainability

We believe sustainability means producing a quality product utilizing a robust and adaptable business model capable of surviving multiple generations with positive impact to the environment, natural resources, industry and community. 

In accordance with these objectives, we continue to participate in the Idaho Sturgeon Cooperative, are actively engaged in research and have developed equipment to advance the aquaculture industry.
