Learn How to Properly Store and Serve Your Caviar

The caviar you are about to consume was over a decade in the making. Typically, on our family farms, it takes 10-15 years before a female Idaho white sturgeon will produce the roe that we expertly craft into the finest caviar. The pristine spring water in which our sturgeon swim yields the cleanest tasting caviar. Our attention to every detail from hatch to caviar ensures you always receive the best quality Idaho white sturgeon caviar.

  • How Do I Serve?

    The delicate beads of Idaho Springs White Sturgeon Caviar can be consumed with or without accompaniment using a non-metallic serving spoon, such as one made from mother-of-pearl or horn, to avoid transferring a metallic off flavor to the caviar.


    As an appetizer, caviar is often served on a blini pancake, cracker, cucumber slice, a boiled new potato half, deviled egg topped with a dollop of creme fraiche, or simply on buttered toast points. 


    Top a watermelon ball with Greek yogurt and caviar for a sweet-salty taste. Even popcorn and potato chips go upscale when sprinkled with caviar! Dressed up or dressed down, Idaho Springs Caviar will elevate your celebration of life!


    Because of its clean taste, Idaho Springs White Sturgeon caviar is often served by the spoonful! Transfer the opened container onto a bed of crushed ice for individual service.

  • How Do I Store?

    Ideally, caviar should be stored between 27°F and 34°F, but never frozen. 


    Using the coldest part of the refrigerator - on ice as long as there is no direct contact (using saran wrap or a liner between) or gel pack making sure that the gel pack does not directly contact container as it can freeze. 


    Opened containers should be consumed within 24-48 hours. 

  • How Will it be Shipped?

    Because caviar and fish are highly perishable, your order will arrive in insulated packaging with gel packs via overnight delivery, arriving Tuesday through Friday afternoons.  Packages weighing 3 lb or less will ship for a flat rate of $35.  Please call for pricing on heavier packages.   You may also provide your own overnight shipping account with UPS or FedEx.


    Orders must be received 48 hr in advance of shipment.  That means, orders placed on Monday will ship out on Wednesday; orders placed on Tuesday will ship out on Thursday; orders placed on Wednesday or Thursday will ship out on Monday; and orders placed on Friday, Saturday or Sunday will ship out on Tuesday.  Saturday delivery, if available in your area, or expedited handling (less than 48 hr notice) will incur a $20 surcharge.  Please provide a valid email address to receive delivery tracking information.


    No orders will ship the day before, the day of or the day after national holidays (July 4th, Memorial Day, Thanksgiving, Christmas, New Year’s Day) or any Monday holidays.  


    We cannot deliver to P.O. Boxes, foreign addresses, Alaska or Hawaii.  Local pickups will not incur a delivery charge, but will incur a $10 box fee (no fee if you bring your own cooler).

  • What Is Your Return Policy?

    Our goal is to ensure you are 100% satisfied with your purchase.  Please inspect the package immediately upon arrival, and refrigerate promptly.  If you believe the product quality has been compromised in transit, please contact us within 24 hours of receipt at (208) 326-4448.   Save packaging materials if you intend to file a claim for packaging damage or product spoilage.  We will gladly reship or credit your account.
